Apple Cinnamon Quinoa Breakfast Bowl

Looking for new and improved healthy breakfast options? This is one of my favorites and so versatile so it’s easy to swap ingredients based on your taste buds. Not to mention a great way to start your day with plenty of protein and fiber. Did you know most Americans are deficient in fiber?

Please don’t let the title fool you. I know apple pie is typically very sweet, but it’s important to understand that this is a naturally sweetened breakfast bowl. Free of artificial sugars! The apple and cinnamon are the perfect amount of sweetness for breakfast in my opinion, but of course feel free to drizzle with honey or additional berries if you need some added sweetness.

I like to cook larger batches of my quinoa and store it in the fridge for up to 3 days so I have it ready on hand when I want to make something like this! Or you can also throw in the rice cooker and it will be ready in about 20 mins.

What’s makes this so “apple pie” like? Well the almond milk, apples and cinnamon get heated up together and instead of eating a cold apple which is totally NOT like an apple pie! You are eating warm cinnamon sweet delicious-ness!

INSTRUCTIONS:

  1. Cook the quinoa if it’s not already cooked, cook it in water plain do not add anything to it.
  2. Once the quinoa is cooked add it to a bowl. In a separate bowl add the almond milk, cinnamon, 1 TBS coconut oil and chopped apples and give it a stir, place it in the microwave for about 45-60 seconds until warm or hot whichever you prefer.
  3. Pour the warm almond milk/apple/cinnamon mixture over the quinoa.
  4. Add additional toppings if desired. i.e) banana, raisin, pecans, etc.
  5. If you choose to add a sweetener I would add it to the microwave mixture!
  6. This recipe serves one but it is easily adapted to serve more!
